Why do we love it?

No, we're not kidding, Chardonnay Talinay 2022 has it all and is ready to conquer the world!  

Tabali family winery was founded in 2002, by Guillermo Luksic. The winery remains to this day the most pioneering and premium winery in the region, with a dedication to the creation of high-quality wines.  

Chardonnay Talinay 2022 Tabali comes from the Limari Valley in Chile and specifically from the Talinay vineyard, located 12 kilometers away from the Pacific Ocean. As a result, the sea breezes cool down the vines and in combination with the limestone soil, we have similar conditions (climate and soil) to Puligny Montrachet.    

The common points with Burgundy continue in winemaking. The grapes are harvested by hand and pressed in whole bunches to ensure the finest and tannin-free juice. The wine is then fermented and aged in French oak barrels (Fontainebleau, Jupille and Vosges) for 10 months. The fruit and oak balance is so incredible that it made us check the tech sheet from the winery over and over again. Yes, and yet it matured in oak barrels for 10 months!  

For the record, Chardonnay Talinay Tabali is, according to Wine Searcher, ranked among the top 5 wines in the region and highly acclaimed on the list of World's Best Value Chardonnay. Furthermore, in 2021 it was named Wine of the Year by Decanter, receiving 96 points.

Tastes Like

This wine dazzles with its bright lemon hue and sophisticated nose. Delicate notes of white flowers and lively citrus intertwine with green apple, pear, wet stone, and lemon verbena. In the background, nuanced hints of spices and toast contribute to its multidimensional allure. 

On the palate, it has a medium body, sharp acidity, and impressive fruit concentration. Stylistically, it evokes the essence of Chablis, with citrus and green fruits highlighted by a pronounced mineral character.

CHARDONNAY TALINAY 2022 - TABALI

PAIR IT

with charcoal-grilled sea bream, linguine with cockles, mussels and clams in butter sauce, saltimbocca alla Romana with chicken. 

Chicken Piccata

  • 2 chicken fillets (breast or thigh)
  • 3 tbsps. of butter
  • 3 juicy lemons
  • 150 ml. white wine (preferably Sauvignon blanc or Assyrtiko)
  • 150 ml. chicken broth, hot
  • 1 bunch of parsley
  • Olive oil
  • Flour for all purposes
  • Capers
  • Salt
  • Freshly ground pepper

First mush up, in a mortar, a pinch of salt, a few peppercorns, some lemon zest and 1 1/ tablespoon of olive oil.

Cut the fillets along with a sharp knife, creating 2 slices of each breast.

Brush the fillets with the mortar mixture by lightly massage the chicken and then flour the fillets.

In a large pan add 2 tablespoons of butter and 2 tablespoons of olive oil. When they heat up, we sauté the chicken until it gets a nice golden color and we remove it from the pan.

In the same pan add the broth and the wine. Allow to boil and then put the fillets back into the pan.

Leave it to high heat until the sauce begins to thicken slightly.  As long as the sauce cools, it will thicken even more, so do not let the whole sauce evaporate.

Add 1 tablespoon of butter, the lemon juice from the two lemons and a few slices of lemon, shake the pan and add the capers.

Remove it from the fire, add chopped parsley and serve with thin pasta, rice or boiled potatoes!
