Why do we love it?

Adrianna Vineyard White Bones Chardonnay 2020 is perfect, truly perfect, from its name, story and winemaking right through to what is in the bottle. This Chardonnay from Gualtallary at 1,450 metres combines freshness with generous fruit in a wine of remarkable pedigree, worthy of comparison with legendary white Burgundies. All of the above earned it near-perfect scores: 99 points from both James Suckling and Robert Parker!

Did we mention the name and the story? White Bones is no random name. Nothing is random at Catena, after all. In the foothills of the Andes, at an altitude of almost 1,500 metres, within the Adrianna Vineyard, there are specific vine rows growing on limestone soils scattered with fossilised animal bones, remnants of a river that flowed through the area thousands of years ago.

Then there is the masterful winemaking of Alejandro Vigil. The wine is fermented in French oak barrels with indigenous yeasts and subsequently aged for 12 to 16 months in second, third and fourth-use barrels. Vigil’s clever touch, which gives the wine its extraordinary freshness and tension, is that only part of the wine undergoes malolactic conversion rather than the entire blend. The result is a wine that is both powerful and refined, with a firm structure and complex character capable of ageing beautifully.

Tastes Like

In the glass, the complex bouquet unfolds slowly, revealing notes of lemon blossom, honeysuckle, lemon, pineapple, green apple and thyme. Hints of wet stone, almond and toast complete this impressive aromatic profile.

On the palate, Chardonnay "White Bones" 2020 Adrianna Vineyard Catena is medium (+) bodied, with vibrant acidity and a subtly creamy texture. The concentration of fruit beautifully envelops the acidity and the fine oak nuances, while in the background the wine’s distinctive saline signature adds an extra layer of savoury complexity and appeal.

Today, under the leadership of fourth-generation vintner Laura Catena and head winemaker Alejandro Vigil, Catena Zapata continues to produce wines of distinctive character, natural balance, and remarkable concentration.

Pair it with lobster ravioli in a butter sauce, slow-cooked dusky grouper with wild greens, or roasted lamb with rosemary and thyme.

Lamb with honey and rosemary

  • 4 racks of lamb with 3 lamb chops each

for the marinade:

  • 2 tbsp chopped rosemary
  • 3 tbsp honey
  • 2 cloves of garlic, finely chopped
  • 125ml red wine

Marinade: Mix rosemary, honey, garlic and wine in a large bowl. Put the racks in and cover them with the marinade. Marinate for 10 '

Drain the racks and put them in a baking pan that has been brushed with oil. Bake for 20 minutes, or according to your preference, in a preheated oven in 200 degrees (Celsius).
