Corte del Lupo Bianco 2019 Ca' del Bosco is a stunning and uniquely complex white wine that blends the structure and richness of Chardonnay with the finesse and fruit-forward elegance of Pinot Blanc. After spending a few years aging in the bottle, it emerges generous and ready to offer pure pleasure and timeless Italian sophistication.

Its story begins in 1972, when Ca' del Bosco crafted its first white wine, originally known as Pinot di Franciacorta Bianco. Over the years, the name changed, but the essence remained: a wine that evolves with remarkable longevity while staying true to its terroir. Since 2017, it has been known as Corte del Lupo—a name that reflects the harmony between vineyards, surrounding forests, and the wolves that silently guard the land.

Corte del Lupo Bianco 2019 Ca' del Bosco is made from 80% Chardonnay and 20% Pinot Blanc, sourced from 13 certified organic vineyards. Each grape cluster is meticulously washed and dried—a signature of Ca' del Bosco’s perfectionism. Fermentation takes place in small, second-use oak barrels (25%) and stainless-steel tanks, adding complexity and balance. The wine matures on its lees for 8 months, and malolactic fermentation is avoided to preserve its crisp acidity and pure fruit character. It then rests in bottle for at least 6 months, allowing its aromatic and flavor profile to fully develop.

Tastes Like

In the glass, Corte del Lupo Bianco 2019 Ca' del Bosco reveals a brilliant golden-yellow color. On the nose, it unfolds aromas of white flowers, ripe apple, citrus, and subtle hints of vanilla and toasted wood.

On the palate, it’s silky, balanced, and complex, with a long finish that leaves behind notes of fruit, hazelnut and minerality.

Perfectly suited to accompany seafood dishes, pasta with white sauces, or aged cheeses.

Salad with chicken and mango

For the chicken
1 medium piece of chicken breast
2 tablespoons of mustard soft
1 tablespoon of honey
1 teaspoon of spice mixture for meat
3-4 tablespoons of lime juice


For the salad
200 gr. mango
1 small yellow pepper
1 small orange pepper
1 small red pepper
1 medium onion
5-6 sprigs of fresh coriander


For vinaigrette
1 tablespoon of ginger soup
2 tablespoons of sugar
1 lime
4-5 tablespoons sesame oil or olive oil

In addition, you will need sesame for serving

For the chicken.
Cut the chicken into small pieces.
Mix honey, mustard, spices and lime juice.
Marinate the chicken in the mix for 10 minutes or more depending on the time you have!

Prepare the vinaigrette.
In a mortar mix sugar and grated ginger. Slowly add the lime juice and stir until the sugar melts. Transfer to a bowl and add the oil of your preference, by stirring with a fork.

Broil the chicken on a pan or on a grill.
Brush the hot chicken with 2 tablespoons of the vinaigrette.
Let it come at room temperature until we the salad is ready!

Cut the onion up, in thin rings.
Put the onion in a bowl of cold water and leave for 5 minutes.
Cut the mango and peppers up, in thin sticks, like fine french fries.

In a bowl, put mango, onion, peppers, chopped coriander and mix with the vinaigrette.

In a serving dish, put some chicken bites and add the salad.
Finish with the rest of the chicken, pour with a little more vinaigrette and sprinkle with sesame seeds.
