Chablis Le Bas de Chapelot 2022 Domaine Eleni et Edouard Vocoret is a wine that simply cannot fail to impress. It masterfully combines the authenticity of Chablis with a unique winemaking approach. It’s worth noting that both Eleni and Edouard apprenticed alongside the renowned Chablis winemaker Dauvissat. 

Domaine Eleni et Edouard Vocoret winery is the result of the passion of two young winemakers, Edouard and Eleni, for wine and the preservation of the Chablis heritage. Edouard, from the renowned Vocoret wine family, has a long history of producing high-quality wines with absolute respect for the environment and nature. Their paths with Eleni crossed in New Zealand, where they decided to forge their own path in the world of Chablis. They chose a small area of about 5 hectares, wisely selecting a site that also includes the Bas de Chapelot vineyard, right next to the famous Montee de Tonnerre. The unique composition of the soil, featuring the characteristic Kimmeridgian limestone, combined with the excellent sunshine, ensures ideal grape ripening and gives the wines a distinctive minerality. 

One of their two wines, Chablis Le Bas de Chapelot 2022 Domaine Eleni et Edouard Vocoret, is produced from this special site. The vines, aged around 40 years, are cultivated organically, without the use of chemicals. Fermentation takes place in stainless steel tanks, and the wine is then transferred to old French oak barrels, where it remains for approximately 12 months, in contact with the lees, developing enviable structure and complexity. The minimal use of sulfites gives it a special and unique character, preserving the elements of Chablis in a more pure and natural expression.

Tastes Like

In the glass it has pale lemon color and has a very elegant nose. The freshness and minerality are very intense, with aromas of lemon zest, lime, citron and wet stone prevailing. White peach, pear, chamomile and orange blossom are intertwined with notes of vanilla, cream and sourdough bread. 

On the palate it has a medium body with crisp acidity that gives freshness. Juicy, with white peach, lemon and pear blended with vanilla and brioche. The aftertaste is long and mineral.

with seafood risotto, shellfish with lemon and white goat cheeses.

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
