Kostaki Winery was founded in 2023 in Western Samos by Evmorfia Kostaki, a chemist and oenologist with studies in Greece, France, and Italy, and a Master of Wine candidate (Stage 2 Practical Only). Together with Lorenz Immerfall DipWSET, they created a boutique winery that marries tradition with expertise, focusing on an elegant and characterful expression of Samos Muscat. Dry 2023 comes from organic vineyards, over 23 years old. The vines are dry-farmed, resulting in grapes with highly concentrated aromas at full ripeness. So far, so good. But then they do something innovative. They combine four different winemaking techniques: from cold pre fermentation maceration (to extract only the delicate aromas of the variety and enhance intensity and character), to skin contact (used in orange wines), oak barrel aging (only 7% of the wine, so the variety isn’t overshadowed), and batonnage (for texture). Confused much? Don’t worry—Evmorfia and Lorenz know exactly what they’re doing to bring you a complex, gastronomic, intense, and characterful Muscat with excellent aging potential.
