Moulin de Gassac Faune belongs to the Grand Terroirs series and comes from a strict selection of old vineyards, planted with two rock‑star grape varieties: Chardonnay and Viognier. One brings acidity and tension, the other delivers generous, apricot‑driven fruit, resulting in a beautifully balanced and expressive white wine.
The Moulin de Gassac project was born in the 1990s from the vision of Aimé Guibert, founder of Mas de Daumas Gassac, with the aim of saving precious Languedoc vineyards and translating the estate’s philosophy of quality into accessible wines for everyday enjoyment. Aimé Guibert was a towering figure of the Languedoc: he appeared in Mondovino and famously stood toe‑to‑toe with another global wine legend, Robert Mondavi!
The blend consists of 60% Chardonnay and 40% Viognier, designed to emphasise expressive fruit, balance and complexity. Moulin de Gassac Faune ferments at low temperatures in stainless steel tanks, where it also matures for 4–5 months, developing a rich, buttery texture.
