Why do we love it?

Moulin de Gassac Faune belongs to the Grand Terroirs series and comes from a strict selection of old vineyards, planted with two rock‑star grape varieties: Chardonnay and Viognier. One brings acidity and tension, the other delivers generous, apricot‑driven fruit, resulting in a beautifully balanced and expressive white wine.

The Moulin de Gassac project was born in the 1990s from the vision of Aimé Guibert, founder of Mas de Daumas Gassac, with the aim of saving precious Languedoc vineyards and translating the estate’s philosophy of quality into accessible wines for everyday enjoyment. Aimé Guibert was a towering figure of the Languedoc: he appeared in Mondovino and famously stood toe‑to‑toe with another global wine legend, Robert Mondavi!

The blend consists of 60% Chardonnay and 40% Viognier, designed to emphasise expressive fruit, balance and complexity. Moulin de Gassac Faune ferments at low temperatures in stainless steel tanks, where it also matures for 4–5 months, developing a rich, buttery texture.

Tastes Like

On the nose, Moulin de Gassac Faune bursts with aromas of apricot, peach, pear, bergamot and white flowers such as honeysuckle and acacia.

On the palate it is full‑bodied, with a rich, creamy texture and rounded acidity. Juicy stone fruits, ripe citrus, honey, lemon blossom and notes of fresh dough come together to form a delicious, harmonious whole.

Mas de Daumas Gassac
Mas de Daumas Gassac is an iconic Languedoc winery in southern France, known as the “Grand Cru of Languedoc”. Founded in 1970 by Aimé Guibert, it is considered a pioneer in the production of high-quality wines outside the traditional regions of Burgundy and Bordeaux. Its wines, notably the iconic Daumas Gassac Rouge, are characterized by elegance, finesse and longevity, with a philosophy that combines organic farming and respect for the terroir.

Ideal as an aperitif, but also a great match for crab salad, salmon with béarnaise sauce and a cheese platter.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
