Goliardo A Telleira Forjas del Salnés is a benchmark expression of Albariño from the master of the variety and the Rías Baixas region, Rodrigo Méndez. If you have already discovered and enjoyed Albariño, this is the next level. Concentrated fruit, intensity, complexity and impressive structure are beautifully wrapped in striking minerality and the razor-sharp acidity that defines Albariño. Consider that the previous vintage was awarded 97 points by Suckling, while the current release is yet to be rated. Rodrigo Méndez has deep family roots in both Galicia and viticulture, giving him an exceptional understanding of the region, as well as access to ancient vineyards, some of which are up to 180 years old. In 2005, he founded Forjas del Salnés, a name chosen as a tribute to his grandfather’s blacksmith workshops (“forjas”), where the craft of ironworking was combined with a passion for winemaking. His philosophy revolves around the authentic expression of terroir with minimal human intervention, as Méndez’s vision is to produce wines that convey the soil, climate and history of their origin with absolute precision.

Goliardo A Telleira Forjas del Salnés is a single-vineyard, single-varietal Albariño sourced from vines over 50 years old, planted right beside the sea. This unique location, which is warmer in comparison with the rest sites that Rodrigo works with, produces an Albariño that balances ripe fruit with a distinctly mineral and saline character. The wine is fermented in old 750-litre oak barrels and aged in 500-litre barrels and 1,500-litre foudres for 12 months. The aim is to preserve the varietal character, while the oak contributes additional layers of complexity, texture and structure.

Tastes Like

On the nose, it reveals aromas of citrus blossom and ripe fruits such as citron, mandarin, peach and pineapple. Its mineral character is highly expressive, showing notes of wet stone alongside hints of iodine from the nearby sea. In the background, subtle nuances of spice and honeycomb add further intrigue.

On the palate, it offers a medium(+) body with vibrant, electric acidity that is seamlessly integrated into the wine and beautifully supported by the fruit. Layers of ripe stone fruit, citrus and lemon curd are complemented by a savoury saline edge that makes it exceptionally food-friendly.

PAIR IT

Pair it with fricassée of black seabream and stamnagathi greens, pasta with shellfish and bottarga, or simply boiled octopus dressed with olive oil and paprika, just as they enjoy it in its homeland.

Lasagna in the oven with mushrooms and prosciutto

Ingredients 

  • 20g butter
  • 2 onions, chopped
  • 3 cloves of garlic, melted
  • 750gr Portobello mushrooms cut in half
  • 15gr dried porcini mushrooms soaked in 150ml of hot water
  • 2 tablespoons of fresh thyme leaves
  • 200gr thin slices of prosciutto
  • 200gr grated mozzarella
  • 8 leaves of fresh lasagna
  • 2 tablespoons panko
  • 2 tablespoons grated parmesan cheese 

For the béchamel: 

  • 100gr butter
  • 100gr flour
  • 850ml semi-skimmed hot milk
  • 3 tbsps. grated parmesan cheese

Directions 

Preheat the oven to 180 ° C. Melt the butter in a pan and cook the onions until they are softened. Add the garlic and cook for a few more minutes. Add the Portobello mushrooms, the porcini after you drain them and thyme. Cook for 15 minutes or until softened. Add salt and pepper according to your preferences. 

For the béchamel, melt the butter in a saucepan and gradually add the flour while stirring well. Allow the mixture to saute for a few minutes and then add the milk, by stirring continuously until it thickens. Add salt and pepper. Finally, add the Parmesan. 

In a pyrex pan, apply the 1/3 of the mushrooms, prosciutto and mozzarella. Lay on them a layer of lasagna and 1/3 of the béchamel. Repeat, and finish with a layer of béchamel sauce. Apply panko and Parmesan on top and bake in the oven for 45 minutes or until golden.
