Why do we love it?

Michele Chiarlo’s Gavi Palas 2024 is a fresh and crisp white wine from Piedmont, made exclusively from the Cortese grape. Its elegant nose, subtle aromas, and zesty lemony acidity will win you over from the very first sip.

The Chiarlo family has a long history in the region, with Michele starting the winery back in 1956. These days, his sons Stefano and Alberto are at the helm. Their philosophy is simple: respect the land, take good care of the vines, and let each grape variety shine in its own way.

Cortese has been grown in Piemonte for centuries. Gavi really made its name internationally from the 1960s onwards, when its wines started being exported and people began to appreciate their elegance. In London, for example, there isn’t a pub worth its salt that doesn’t serve Gavi by the glass!

Gavi Palas 2024 is made from hand-picked grapes, gently pressed, and fermented in stainless steel tanks to keep all that freshness. It matures on its lees for at least three months, which gives it a bit more body and complexity.

Tastes Like

In the glass, it’s a bright straw yellow with greenish hues. On the nose, you’ll get aromas of white flowers, peach, citrus, and a subtle minerality.

On the palate, it’s light to medium-bodied with crisp acidity. Each sip brings flavours of pear, green apple, white peach, lemon zest, and a hint of wet stone.

PAIR IT

Pair it with steamed mussels in white wine, fresh white cheeses like ricotta or mozzarella, or light pasta dishes with veggies or pesto.

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
