Kidonitsa Sparkling by Papagiannakopoulos Winery is an elegant sparkling wine that combines the delicate aromas of the variety itself (quince, pear, white blossoms and bergamot) with those derived from the traditional Champagne method (dough, hazelnut and biscuit notes). Panos Papagiannakopoulos is a young yet highly promising winemaker. Having worked for years with some of Greece’s leading wineries, he decided the time had come to create something of his own. He settled in Nemea and gradually turned his vision into reality, with his brand-new winery now fully established.
Panos was among the first winemakers in Nemea to believe in Kidonitsa and introduce it to the region, proving that this variety can work wonders beyond its traditional homeland. Determined to push the grape to its limits and showcase its full potential, he dared to create a sparkling expression of Kidonitsa, produced through a second fermentation in the bottle, just as in Champagne. The wine matured in bottle for more than 12 months following the second fermentation. Then, with dedication and care, he painstakingly hand-riddled each bottle little by little, allowing the sediment to gather in the neck before disgorgement. The result fully rewards its creator and is sure to delight both lovers of the variety and enthusiasts of fine sparkling wines alike.
