La del Vivo 2023 by Raúl Pérez is here to prove that the gifted Raúl is exceptional even when it comes to white wines. At Botilia summer tasting, it was the wine that stood out among all the wines of the tasting! Yes indeed — and just imagine the level of competition it had! Intensity, balance, complexity, solid structure and an endless saline finish come together to create a great wine, which is why it was awarded 95pts by Suckling and 94pts by Robert Parker!

Raúl Pérez, a name that has been closely associated with the renaissance of Spanish wine and especially Bierzo. He has been recognised as “the best winemaker in the world” by leading wine publications, while his wines dominate the scores year after year. A devotee of biodynamic farming and minimal intervention winemaking, as he believes this is the only way to bring into the glass the unique characteristics of local varieties such as Mencía and Godello.

The La Vizcaína range is the expression of specific old vineyards, each with its own unique character, on the slopes of the village of Valtuille in Bierzo. La del Vivo 2023 Raúl Pérez is the only white of the range and consists of a blend of Godello with a small addition of Doña Blanca (10–15%). Godello ferments and matures for 12 months in used French foudres. Doña Blanca follows a different path, as it ferments in 700L amphorae with the skins, before maturing in the same vessels under *flor. Through this process, Raúl Pérez manages to preserve the primary fruity characteristics of the varieties, while simultaneously adding elements that enhance both the complexity and the structure of the wine.

If until now you knew Raúl Pérez for his reds, it is time to discover that he makes equally fantastic whites!

*Flor is the thin film of yeast that forms on the surface of the wine and protects it from oxidation, while at the same time imparting aromas of olive, almond and mushroom. It is most found in Sherry wines.

Tastes Like

La del Vivo 2023 by Raúl Pérez on the nose shows medium (+) intensity, with aromas of citron, white-fleshed peach, pear and green apple. Notes of lemon verbena, toasted bread, green olive and roasted almond complete the complex bouquet.


On the palate it has medium to full body, lemony acidity, a creamy texture and impressive fruit concentration. Notes of lemon cream, ripe apple, dough, salted nuts and mint fill the palate.

Bodegas Raul Perez

Raul Perez is one of Bierzo's most famous winemakers. He has learned all the secrets of biodynamic farming and Mencia next to the great Alvaro Palacios. Around 2000 he decided to turn to biodynamic cultivation and mild natural vinification. Raul Perez lets the terroir and variety speak for themselves and that is why his wines have so much to say.


PAIR IT

Pair it with fried rabbit with herbs and lemon, pasta with hazelnut pesto, goat’s cheese with sage or grouper baked in a salt crust.

Linguini with red mullet fillet, capers, leek, cherry tomatoes and lemon

  • 500 gr linguine
  • 4 red mullets (600 gr)
  • 1 stick of celery
  • 1 carrot
  • 1 onion
  • 200 ml of white wine
  • 80 ml of olive oil
  • 1 leek
  • 60 gr capers
  • 250 gr of cherry tomatoes
  • 60 ml lemon juice
  • Slice of a lemon
  • 2 tbsps. of chopped parsley
  • Salt
  • Pepper

We fillet the red mullets by removing the scales, the bones and the intestines. Cut the celery, carrot and onion into chunks.

Put half the olive oil in a saucepan, let it heat up and sauté the bones from the fish. Add the chopped vegetables and continue sautéing. Pour in half of the wine, boil for two minutes to evaporate the alcohol and add 3 lt of water to cover. Boil for about half an hour in moderate heat.

Pass the broth through a strainer, put it in a pan of 30 cm diameter and boil the linguini. If necessary add a little water. Pasta should absorb all of the broth so that we don’t have to strain them and lose their starch.

At the same time, in another non-stick pan, sauté the red mullet fillets after seasoning them well. We start from the side of the skin by pressing them with a spatula and then we turn them over. The whole process takes about 2 minutes, depending on the thickness of the fillet. Remove from the pan and continue with the cherry tomatoes, which are cut in two, sautéing very lightly. Continue with leeks that have been cut into sticks. At this stage caution is needed because leek can be burn easily.

Add the caper, after we have removed the excess of salt it, and pour in the rest of the wine and the lemon juice. Allow to boil for one minute, then, put in the sauce the pasta and stir. Remove from heat, add parsley, zest and 2 tablespoons of extra virgin olive oil. Mix well and serve.
