While the wines from Grand Cru vineyards are considered the kings, those from 1er Cru vineyards, especially Fourchaume, are often referred to as "small Grand Crus" or the "princes of Chablis."

Lamblin & Fils is one of the oldest Domaines in the Chablis region, with the family's first plantings recorded in Maligny in 1690. Louis Lamblin, a prominent family member, played a decisive role in shaping the original designations of origin. Today, the 12th generation of the Lamblin family continues this tradition, cultivating the vineyards with sustainable agriculture principles and respect for the environment. Lamblin Chablis 1er Cru Fourchaume is fermented in stainless steel tanks to highlight the terroir and the minerality of the Kimmeridgian soil. The wine is then left in contact with the fine lees for six months, acquiring an oily texture that perfectly captures the depth, purity, and authenticity of the 1er Cru Fourchaume Vineyard.

Tastes Like

In the glass it has a bright yellow color. Elegant aromas of honeysuckle, lemon blossom, green apple, lemon, white peach and citron, harmoniously intertwined with notes of wet stone, brioche and sweet apple.  

On the palate it has medium to full body, subtly oily texture and crisp acidity. Lemon sorbet, lemon zest, peach, green apple, fresh almond, brioche and dough are complemented by an elegant, savoury, long-lasting finish.

CHABLIS 1ER CRU FOURCHAUME 2021 - LAMBLIN & FILS

with oysters, fish carpaccio, ceviche or salmon fillet with lemon sauce 

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
