Why do we love it?

Lamda Assyrtiko Ktima Liga was one of the first orange wines of the new generation and one of those that first conquered the foreign audience and then the Greek. For many, it is probably the best Greek orange wine, with excellent aging potential. For us, it is just a delicious, gastronomic wine.

Thomas Ligas was one of the pioneers who brought the philosophy of biodynamic cultivation to Macedonia. With his children, Jason and Melisanthi, by his side they took things one step further. Their philosophy is summarized in the following: permaculture, minimal interventions both in the vineyard and in the wine, no sulfites or commercial yeasts.

Lamda Assyrtiko Domaine Ligas is an Assyrtiko that ferments with skin contact for 7 days and indigenous yeasts and matures in used oak barrels for 8-12 months. It is bottled unfiltered, without any other intervention and the result is exuberant and intense. The epitome of orange wine as many might say.

Such a diamond could only be bottled in a strictly limited number of bottles that can be found mainly in the wine lists of the world's best wine bars.

Tastes Like

Lamda Assyrtiko Domaine Ligas has medium orange color and complex aromas of candied orange peel, kumquat, grapefruit, malt, citron, peach jam, honey and toasted sourdough bread.

In the mouth, its structure is impressive, since it has medium to full body, crisp acidity and a hint of tannins. The ripe citrus fruits are mixed with notes of lotus and quince, while notes of dried nuts, dough and wet stone complete the complex set.

LAMDA ASSYRTIKO 2020 - KTIMA LIGAS

PAIR IT

Pairs very well with mushroom risotto, hazelnut crusted chicken with citrus, pork with quinces

Pumpkin risotto with dry anthotyro cheese

  • 250 grams of Arborio rice
  • 500 ml of vegetable broth
  • 1 medium onion
  • 50 ml olive oil
  • 150 ml white wine
  • 300 gr pumpkin
  • 1 star anise
  • 100 gr butter
  • 50 ml of cream
  • 150 g dry anthotyro cheese
  • Salt
  • Pepper

Pare the pumpkin, chop half in dices and boil the rest in salted water with star anise. After it gets soft, remove the anise and transfer into a blender. Blanch the diced pumpkin in salted water. Chop the onion and sauté in olive oil, in a large saucepan until it is transparent, then add the rice by stirring with a wooden spoon. Pour in the wine and allow it to evaporate. Add some of the broth occasionally, by stirring continuously until the risotto is done. Remove from heat, add puree and diced pumkin, cream, butter, and cheese and mix all the ingredients well. Serve and if you like,  add a little more cheese and some of the pumpkin's dices.
