Nikos Hatzakis is building a new winery. This means more space, especially for experimentation. Libero - Syros Winery is one of these experiments, which started earlier. Like all experiments, it was produced in a very limited number of bottles, just for a lucky few ones to get a taste of what awaits them. Serifiotiko, originating from Serifos, was vinified with orange logic giving a complex wine for serious wine lovers.
What does orange vinification mean? Practically that the winemaker treats a white variety as if it were red. That is, the wine remains during the extraction for several hours or even days with the marcs and the skin of the fruit, taking from it a tannic character, a darker color and subtle oxidation characteristics.
The name Libero in combination with the Subuteo player (the older ones may remember it) refers to the freedom and non-inclusion in rules followed by Nikos Hatzakis from the cultivation in the vineyard to the final steps of bottling.
