Why do we love it?

Nikos Hatzakis is building a new winery. This means more space, especially for experimentation. Libero 2020 - Syros Winery is one of these experiments, which started earlier. Like all experiments, it was produced in a very limited number of bottles, just for a lucky few ones to get a taste of what awaits them. Serifiotiko, originating from Serifos, was vinified with orange logic giving a complex wine for serious wine lovers.

What does orange vinification mean? Practically that the winemaker treats a white variety as if it were red. That is, the wine remains during the extraction for several hours or even days with the marcs and the skin of the fruit, taking from it a tannic character, a darker color and subtle oxidation characteristics.

The name Libero in combination with the Subuteo player (the older ones may remember it) refers to the freedom and non-inclusion in rules followed by Nikos Hatzakis from the cultivation in the vineyard to the final steps of bottling.

Tastes Like

Libero Syros Winery has deep golden color with orange hues and intense aromas of dried apricot, grapefruit, bergamot and orange. Notes of thyme and dried nuts complete the special set.

In the mouth it has medium + body, with pleasant balanced acidity and rich aromas of ripe citrus, quince and walnut.

PAIR IT

Pair it with sautéed shrimp with orange, roasted chicken with lemon and thyme, broiled bass with lemon and panko

Shrimps with garlic and lemon

  • 500 gr. jumbo sized shrimps. Defrost them if they are frozen. If they are not pre-peeled, peel them when they have defrosted.)
  • 2 tbsps. olive oil
  • 1 tbsp. butter
  • 2 cloves of garlic, chopped
  • 2 tbsps. fresh lemon juice
  • ½ tbsp. lemon zest
  • salt

If you use frozen shrimps, let them defrost overnight in the fridge. Drain the shrimps and dry them with kitchen towel.

 Zest a large lemon and then squeeze the juice to give at least 2 tablespoons of juice and close to half a tablespoon of lemon zest. Clean the garlic and finely chop  it.

 Heat the olive oil in medium to high heat, then add the butter to melt.

Add the shrimps to a single layer and leave until they start getting pink color at the edges, no longer than 1-2 minutes.

Turn the shrimps on the other side and add the chopped garlic. Continue cooking for another 3-4 minutes. Pour in the lemon juice, add the lemon zest and salt to taste and mix to cover the shrimps with the sauce.

Serve immediately
