Why do we love it?

Linon Assyrtiko by Stavropoulos Estate is one of those well-kept secrets among wine insiders—so well-kept, in fact, because there simply isn’t enough to go around! Many famous critics have written anthems about it and they are not exaggerating in the slightest. Ιt is rumored that it is the best Assyrtiko outside of Santorini. And you know what? We believe it might be. When we tasted the 2019 vintage (which we managed to secure just for you), our jaws dropped. And when we saw the price, we seriously considered keeping it all to ourselves. But hey—great wines are meant to be shared. And Linon isn’t just a great wine—it’s many more.

Stavropoulos Estate is a boutique, family-run winery located in Palaiochori, Ilia, in the western Peloponnese. Nestled in a region protected under the Natura 2000 network, the estate benefits from a unique microclimate that nurtures grapes of exceptional quality. The story began in the mid-1990s, when brothers Alekos and Sakis planted their first vines. In 2017, the next generation took the reins—Menelaos and Eleni - bringing fresh energy and the same deep passion for crafting remarkable wines.

The grapes for Linon Assyrtiko 2019 Stavropoulos Estate come from a vineyard so close to the sea, it’s said to “kiss the shoreline.” This proximity gives the wine its signature saline minerality. The name “Linon” refers to the ancient Greek “linos”, the traditional stone trough where grapes were once stomped by foot—a nod to heritage, but also a bridge to the future.

The 2019 vintage was blessed with ideal conditions for Assyrtiko, and the result is a wine that balances minerality, freshness, and depth. Its unique character has earned it the right to age, so today it has evolved masterfully.

Tastes Like

On the nose, Linon Assyrtiko 2019 Stavropoulos Estate opens with zesty lemon freshness, layered with notes of mandarin peel, honey, petrol, ripe peach, toast, and wet stone.

On the palate, the acidity is vibrant and crisp, the mouthfeel full and sculpted by time. Flavors of yellow stone fruits, juicy citrus, and wet stone fill the palate with elegance and energy.

Pair it with grilled sea bass with lemon olive oil, chargrilled calamari with mint oil, white fish tartare with citrus and chargrilled lamb chops

Chicken with zucchinis

  • 1 kg. chicken breast
  • 750 gr. zucchinis
  • 1 onion
  • 2-3 green onions
  • 1 chicken stock cube
  • 100 ml. olive oil
  • 2 eggs
  • 2 lemons
  • Salt
  • Pepper

 

Once the breast is cut into smaller fillets, mix in a bowl half the olive oil along with the chicken stock, until a mixture is made and the chicken is dipped. Put the fillets in a non-stick pan until they are evenly browned. Transfer the fillets to a saucepan and, in the pan, add the onion and sauté it in medium heat. Then mix the onion with the chicken. Put the pot on medium heat and add 1 cup of hot water. Simmer for 20 minutes, add zucchinis and chopped green onions, plus freshly ground pepper and salt if necessary.

Prepare the egg yolk by whipping the egg whites, add the yolks, the juice from 2 lemons and finally the hot liquid from the pan.

Pour in the egg sauce, and keep churning until it has been incorporated into the food.
