Why do we love it?

Mâcon-Verzé 2022 from Domaine Jules Desjourneys is a sophisticated Chardonnay that impressed us from the very first sip. Dense fruit, concentration, zesty acidity, remarkable balance and a refined minerality all showcase the greatness of the variety when handled by the right hands. Exceptional Chardonnay isn’t produced only in Meursault and Puligny-Montrachet – Mâconnais can deliver just as much brilliance, and this wine is proof of that!

The winery was founded in 2007 by Fabien Duperray, a legendary figure in French wine, who left behind a successful career as a négociant to dedicate himself to crafting wines with his personal signature. The Domaine Jules Desjourneys cultivates Gamay in Fleurie and Moulin-à-Vent, as well as top-tier Chardonnay in Mâconnais, blending tradition with innovation and prioritising purity in the expression of terroir. Fabien’s commitment to gentle, “natural” winemaking is reflected in the name of the estate, which pays homage to Jules Chauvet, the “father” of natural wines. Fabien has earned a reputation for obsessive attention to detail, precision, and clarity in his wines.

For Mâcon-Verzé 2022 Domaine Jules Desjourneys, the grapes come from estate-owned vineyards located above those of Leflaive. While the winery initially used a mix of stainless steel tanks and a small percentage of oak barrels, from 2021 Fabien shifted towards maximum terroir expression, minimising or even eliminating barrel use. The 2022 vintage was fermented with indigenous yeasts and aged on the lees for around 36 months, before being bottled with minimal filtration – resulting in a white wine of great complexity and creamy texture that truly surprises.

Tastes Like

On the nose, it bursts with aromas of lemon, green apple, peach, bergamot, and pear. Hints of cream, dough, fennel, and wet stone round out this distinctive profile.

On the palate, it has medium body, with an excellent balance between richness and crisp acidity. Flavours of ripe apple, pear, peach, lemon, and citron are complemented by subtle notes of hazelnut, honey, and dough.

Enjoy it with linguine with crayfish in a butter sauce, sea bass fricassée, or goat’s cheeses.

Tagliatelle with mushroom sauce

  • ½ kg of fresh mushrooms
  • 1 clove of garlic chopped
  • 1 tbsp. of lemon juice
  • 3 tbsps. of olive oil
  • 1 tsp. of salt
  • freshly ground pepper
  • 1 tbsp. of chopped parsley
  • 1/2 kg tagliatelle pasta
  • 1 glass of white wine
  • 1/4 cup of cream
  • 3 tbsps. Parmesan cheese and as much as you like for serving

Clean the mushrooms. Cut the edges and then slice them and mix them with the lemon juice.

In a large frying pan add the olive oil and put it in a medium - high heat and when it heats up well, add the garlic stirring well to keep it from sticking and not burn. Add the mushrooms, stir well and cover the pan with a lid. Sauté for 4 minutes stirring frequently.

Remove the lid and add salt and pepper according to your preferences. Stir occasionally and   allow them to absorb their juices and become brown (about 5 minutes).

At the same time, in a pot, boil some water and prepare the tagliatelle according to the instructions of their packaging.

Pour a glass of white wine in the pan, preferably from the wine with which you will accompany the plate.

Add cream and grated Parmesan and let it simmer by lowering the heat, for 3 -4 minutes until it thickens. Remove the pan from the fire, add the pasta, mix well and add the parsley. Serve with grated parmesan cheese.
