Why do we love it?

Mantineia Domaine Skouras is finally here, and we couldn’t be more excited! Aromatic and expressive, like all the Skouras family wines, this wine will win you over from the first sip, even if you don't usually enjoy Moschofilero. 

Domaine Skouras needs no introduction, as it is one of the most well-known wineries in the country. Mantineia and Moschofilero are nothing new to Giorgos and Dimitris Skouras, who have been involved in crafting Moschofilero wines for years. Their Moschofilero has always been sourced from Mantineia, but the PDO legislation requires that the wine be vinified within the Mantineia zone. To comply, they acquired a second winery in Mantineia. Thus, Moschofilero, previously known as Portes, was adorned with its prestigious PDO Mantineia designation. 

For Mantineia Domaine Skouras, the grapes were harvested from the best vineyards at an altitude of 650 meters in Mantineia. The meticulous winemaking process includes pre-fermentation maceration for a short time and aging on the fine lees, resulting in a wine with exceptional fruit purity and elegant texture.

Tastes Like

Mantineia Skoura has a pale lemon-green color and a lively aromatic profile. Delicate aromas of white flowers, orange blossom and citrus notes, intertwine with lemon leaves and zest. 

On the palate, its crisp acidity and balanced body make it an ideal companion for a variety of dishes, from seafood to light salads.

with green salad with goat cheese and citrus vinaigrette, shrimp tartare with chili and lime, fried calamari with tartare sauce 

 

Wild boar casserole with tagliatelle pasta

  • 1 kilogram of wild boar
  • 1 carrot coarsely chopped
  • 1 celery coarsely chopped
  • 1/2 bunch of fresh onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 2 cloves of garlic
  • 3 tbsps. of mustard
  • 3 tbsps. of lemon juice
  • 5 allspice berries
  • 1 bay leaf
  • Salt and pepper
  • 200 g olive oil
  • 250 ml red wine (preferably xinomavro)
  • 500 g of tagliatelle

 

Cut the wild boar in portions. Put all the ingredients in a bowl, except olive oil and pasta. Marinate for at least 12 hours.

When we are ready for cooking, remove the boar from the marinade, drain it to leave the many liquids and sauté with the oil until it gets golden-brown. Add the marinade and lower the heat to simmer for 30 minutes.

Transfer them all to the casserole and put it in a preheated oven, at 150 ° C. Stir regularly to keep liquids from sticking. If more liquids are needed, add some vegetable broth.

Boil the pasta according to the instructions (preferably al dente).

Garnish with a little chopped parsley over the plate.
