Why do we love it?

If you know the variety, you will say without a doubt "It's definitely Debina!" at the first sip of Miss De Bina 2021 Jima Winery. And this is because Panos Tzimas knows very well the personality of the varieties he deals with and the best way to highlight them. With Miss De Bina 2021 you will see Debina, the local variety of Zitsa, as expressive and as explosive in the mouth as it can be.

Panos' new project "Les Vignerons" concerns his collaboration with local producers to highlight the characteristics of the variety, the year, and the place. The 30-year-old vineyards from the heart of the steep slopes of Zitsa of Ioannina are cared for us by Mr. Stefanos. The high altitude of the cold Zitsa and the soils of the area give it a naturally accentuated acidity. This characteristic of Demina had long been discovered by the producers, and that is why Debina was used for the historical sparkling wines of the region!

Oily in the mouth from 8 months spent on its fine lees and with pronounced but perfectly integrated acidity, Miss De Bina Day 10 2021 Jima Winery has rightfully won a place in our hearts.

Tastes Like

It has a golden yellow color and on the nose, you will find green apple, peach, lime, and pear.

The mouth reveals white flowers, notes of juicy tangerine, and light minerality at the end. Medium fat body with high, crisp, well-integrated acidity and soft subtle aftertaste.

PAIR IT

Pairs very well with shellfish, crab salade

 

Steamed mussels with turmeric

  • 700 g mussels
  • 1 green onion, chopped
  • 1 Garlic, chopped
  • 1 tsp.  turmeric
  • 1 glass of white wine
  • Olive oil
  • Salt (Optional)
  • Pepper

Wash the mussels under plenty of water, removing the sand and seaweed and thoroughly cleaning the shell.

Saute the onion and garlic and add the mussels. Then add 1 tablespoon sweet turmeric and one glass of wine. Let the alcohol evaporate a little and cover the pot to boil for 5'-6 '.

Agitate the pot, remove the cover and serve on a deep dish.

Add freshly ground pepper (salt is optional) and garnish with a sprig of fresh thyme.

TIP: During the wash, throw the open mussels. After cooking,  throw the closed mussels.
