The name Ousyra means joy and carries with it a story of love and devotion to the island of Syros. It was there that Edward left behind Scotland to dedicate himself to showcasing the island’s terroir and its rare, almost forgotten Cycladic grape varieties, guided by a philosophy of minimal intervention.

Monemvasia Amphora Ousyra Winery is vinified and matured in amphora for 4–6 months, with extended lees contact, gaining remarkable texture, complexity and an irresistible gastronomic character.

Tastes Like

On the nose, it reveals white peach, pear, citrus fruits, floral notes and elegant hints of minerality.

On the palate, it shows a medium body and bright, lemon‑driven acidity. Yellow and green fruits intertwine with fine herbal and white‑flower notes, all set against a subtle backdrop of saline freshness.

A couple from Scotland, passionate about winemaking, recognized the potential of Syros and decided to create great wines with the characteristic Cycladic aura. They brought together a magnificent group of talented and experienced oenologists and with their help managed to create two emblematic wines of rare and almost extinct varieties.

PAIR IT

Pair it with bacalao bianco, steamed mussels with parsley and white wine, or tabbouleh with sautéed calamari.

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
