Why do we love it?

The Muscat Blanc Sec Natur-ε from Tetramythos Winery is a very tasty wine. The variety itself is strongly aromatic, but the way it is cultivated, it acquires a tremendous purity and intense freshness that makes it a masterpiece. When you taste it, believe us, it will awaken all your senses! We loved it.

Tetramythos Winery has now been characterized for the mild intervention wines it makes, but also for the importance it gives to both terroir and local varieties. About 15 years ago, in Aegialia and the village of Vrosthena Diakopto, they planted their organic vineyards at an altitude of 915 meters. There, they cultivated the vines based on the principles of organic farming and the low yield per hectare gave very concentrated fruits. The grapes were harvested by hand and the weak precious liquid was fermented with its native yeasts in tanks. The malolactic fermentation, the stay with the fine lees for 5 months, and its unfiltered bottling gave a perfectly gastronomic Moschato.

Make sure to have it while you can because of the 3500 bottles produced (don't be fooled by the number) most of them go to France, where there are many competitors and they are already dying for it!

Tastes Like

Bright yellow with golden highlights. It presents a tremendous purity of aromas of kumquat, honeysuckle, lemongrass, Turkish delight, bergamot, sweet lemongrass, and soft mineral notes.

In the mouth, it has a moderate body. It has a crisp acidity that offers particular freshness and perfectly balances its intense fruity aromas. Ripe apricot, bergamot delight, spoon sweet orange, citrus oils, pomegranate, and a soft metallic sensation, compose a very tasty result with a long aftertaste.

You can enjoy it as an aperitif, with Greek dishes such as gemista (stuffed vegetables with rice and herbs), with a prosciutto salad, seafood risotto, and a variety of cheeses.

Salmon Teriyaki with rice noodles

  • 2 salmon fillets with skin
  • 4-5 tbsps. soy sauce
  • 2 tbsps.  honey
  • 50 gr. fresh ginger
  • 1 clove of garlic
  • 1 tbsp. white balsamic vinegar
  • 1 tbsp. sesame oil
  • Chili flakes
  • 2 limes
  • Fresh coriander
  • 1 green onion
  • 1 tsp. sesame
  • 400 gr. Rice Noodles

Grind the ginger with a grater or a multi and mush up the garlic, after you remove the green core.

Cut the salmon fillets in two and place them in a deep and narrow pot. In a bowl, mix the minced garlic , ginger, vinegar, sesame oil, soy sauce, chili flakes and honey. Cover the fillets with the marinade and leave them aside to prepare the noodles.

In a large bowl put the noodles and cover them with hot water. Leave for a few minutes, until they get soft.

Heat a non-stick pan and sauté the salmon fillets on both sides for a few minutes.

Add the marinade of the fillets and cook at moderate temperature until the sauce is ready.

Remove the fillets and add the noodles to the center of the pan, drained. Stir lightly and withdraw from the heat.

Add chopped coriander and green onion.

Sprinkle with roasted sesame seeds and serve with slices of lime.
