Why do we love it?

Nychteri 2022 from Mikra Thira Winery on Thirasia offers a distinctive version of Santorini’s classic Nychteri style seen through the eyes and winemaking expertise of Vangelis Gerovassiliou, Vassilis Tsaktsarlis, and Ioanna Vamvakouri.

Its name, Nychteri, comes from the tradition of harvesting grapes during the night (nychta in Greek) to preserve their freshness and protect them from the intense daytime heat. This version is crafted from overripe Assyrtiko, Aidani, and Athiri grapes, co-fermented with care, first in stainless steel tanks, and then transferred to French oak barrels, where fermentation is completed and the wine ages on fine lees for 4 months. After bottling, it matures for about a year in the winery’s cellar, developing richness, volume, and a round, creamy texture.

Nychteri 2022 from Mikra Thira blends the mineral intensity of Thirasia’s rare volcanic terroir with elegantly integrated oak, resulting in a wine that’s refined, complex, and deeply enjoyable.

Tastes Like

On the nose, it opens with aromas of lemon, citron, lemon blossom, and white peach, layered with notes of vanilla, honey, hazelnut, brioche dough, and wet stone.


On the palate, it has a medium-plus body, bright acidity, and a creamy texture. Flavors of juicy lime, citron, peach, and lemon are complemented by honey, honeycomb, brioche, and a salty minerality that lingers on the finish.

NYCHTERI 2022 - MIKRA THIRA

PAIR IT

Pair it with oysters in butter sauce, linguine with sea urchin and lemon, charcoal-grilled grouper collar, or slow-roasted kid goat over vine cuttings.

Charcoal roasted salmon

  • 1 kg salmon fillets
  • 1/4 cup soy sauce
  • 1 tbsp. chili sauce
  • 1 tbsp. fresh ginger (grated)
  • 2 cloves of garlic
  • Juice and zest from a lemon
  • 1 tbsp. black sugar
  • Tomato, freshly chopped
  • 2 sprigs of rosemary

Rinse the salmon fillets.

Mush the garlic and a tablespoon of ginger on a plate.

Put the above in a deep dish and add soy, chili, lemon zest and lemon juice and a tablespoon of black sugar to make the marinade.

Place the salmon fillets in the marinade for half an hour.

Prepare the grill at high temperature and place the fillets for a few minutes on each side. As long as the fillets are roasting, brush them with the remaining marinade so that they do not dry out.

Garnish the salmon with freshly chopped tomatoes and 2 sprigs of rosemary.

Accompany with basmati rice.
