Why do we love it?

One Off Pet Nat Foivos Papastratis was born out of the need to capture in a bottle the value of collaboration, as this is a joint project with Markou Vineyards. Yet this wine is so much more than that. It is effortlessly delicious and the perfect choice when you want to drink something that lifts your mood and helps you unwind after a long, demanding day.

Every year, Foivos, true to his restless spirit, travels across Greece in search of his next project. He has been to Santorini, Kefalonia and Goumenissa, creating white and rosé wines of real distinction, always through meaningful collaborations with the producers of each region. This year, he decided to join forces with two more young winemakers, the Markou brothers, and to work with a much-misunderstood grape variety of remarkable potential: Savatiano.

One Off Pet Nat Foivos Papastratis is made using the ancestral method, with fermentation finishing in the bottle, unfiltered and with minimal intervention. The natural bubbles are “trapped” within the wine, giving it vibrancy, energy and a playful character that perfectly reflects the philosophy of the project.

Only a few bottles, but plenty of pleasure – so you know what to do.

Tastes Like

In the glass, One Off Pet Nat Foivos Papastratis appears slightly cloudy, as the style demands. The nose is clean and fresh, with lively aromas of green apple, lemon, bergamot, apricot, fresh grape and white flowers, framed by subtle notes of dough.

On the palate, it shows a medium body, with refreshing acidity, a hint of sweetness, and fine, playful bubbles that enhance its freshness. Ripe pear, peach, apricot, citron, bergamot zest, honeysuckle and brioche notes fill the mouth with every sip.

Foivos Papastratis

Foivos Papastratis is one of the youngest winemakers in the country. His vineyards are located in Lilantio Field, in the area of Ampelia. He creates wines with fresh style and loves experimenting.

PAIR IT

Pair it with vegetable and prawn tempura, chicken noodles, or kalitsounakia filled with mizithra cheese.

Salmon Teriyaki with rice noodles

  • 2 salmon fillets with skin
  • 4-5 tbsps. soy sauce
  • 2 tbsps.  honey
  • 50 gr. fresh ginger
  • 1 clove of garlic
  • 1 tbsp. white balsamic vinegar
  • 1 tbsp. sesame oil
  • Chili flakes
  • 2 limes
  • Fresh coriander
  • 1 green onion
  • 1 tsp. sesame
  • 400 gr. Rice Noodles

Grind the ginger with a grater or a multi and mush up the garlic, after you remove the green core.

Cut the salmon fillets in two and place them in a deep and narrow pot. In a bowl, mix the minced garlic , ginger, vinegar, sesame oil, soy sauce, chili flakes and honey. Cover the fillets with the marinade and leave them aside to prepare the noodles.

In a large bowl put the noodles and cover them with hot water. Leave for a few minutes, until they get soft.

Heat a non-stick pan and sauté the salmon fillets on both sides for a few minutes.

Add the marinade of the fillets and cook at moderate temperature until the sauce is ready.

Remove the fillets and add the noodles to the center of the pan, drained. Stir lightly and withdraw from the heat.

Add chopped coriander and green onion.

Sprinkle with roasted sesame seeds and serve with slices of lime.
