Why do we love it?

Do you remember the Oreivatis Savatiano Old Vines from Akriotou Winery, which made you change your mind for this variety? Get ready for Oreivatis Wild, the winery's new venture, making its first entry into the ramparts of the demanding California market!

At the foothills of Kithairon, in Platae Viotia, Vasiliki Akriotou took advantage of her father-in-law's abandoned vineyards and with an eye to do something different from all the rest winemakers, she decided to give a step to Savvatiano and highlight the deliciousness of this variety!

For Oreivatis Wild, the grapes were harvested from vines 40-60 years old, at altitudes of 280 to 380 meters. Yields, as would be expected, are about 500 kg per hectare in a total crop of only 50 hectares. Let us also tell you this, the specific vines are grown completely dry! The wine is fermented with wild yeasts, under controlled temperatures, in stainless steel tanks. After fermentation, it remains in contact with the lees for 18 months. That is the reason for its aromatic character, its awesome concentration and balance!

It is bottled in 5,000 bottles/year in total, but don't be fooled by the number. Hurry up to buy yours, because the population of California in 2022 was 40 million...

The wine calls out for seafood appetizers and grilled fish!

In the glass it is bright, clear, almost crystalline, with a light pale yellow color and soft greenish highlights. The aromas are intense with the white flowers dominating. Then aromas of lime, lemon, citrus, grapefruit and green millet, banana and quince appear. Biscuit and vanilla aromas make their appearance, with soft herbal notes on the finish.

Rich in the taste with refreshing medium(+) acidity. Unripe apricot, lemon, louise and grapefruit bring an excellent balance. It has a long enjoyable aftertaste.

PAIR IT

Pairs very well with roasted chicken in lemon sauce, fried mussels with mustard and lemon, or squid stuffed with oatmeal, parsley, and feta cheese.

Shrimps with garlic and lemon

  • 500 gr. jumbo sized shrimps. Defrost them if they are frozen. If they are not pre-peeled, peel them when they have defrosted.)
  • 2 tbsps. olive oil
  • 1 tbsp. butter
  • 2 cloves of garlic, chopped
  • 2 tbsps. fresh lemon juice
  • ½ tbsp. lemon zest
  • salt

If you use frozen shrimps, let them defrost overnight in the fridge. Drain the shrimps and dry them with kitchen towel.

Zest a large lemon and then squeeze the juice to give at least 2 tablespoons of juice and close to half a tablespoon of lemon zest. Clean the garlic and finely chop  it.

Heat the olive oil in medium to high heat, then add the butter to melt.

Add the shrimps to a single layer and leave until they start getting pink color at the edges, no longer than 1-2 minutes.

Turn the shrimps on the other side and add the chopped garlic. Continue cooking for another 3-4 minutes. Pour in the lemon juice, add the lemon zest and salt to taste and mix to cover the shrimps with the sauce.
