The Kir-Yiannis Sparkling waves you from the north, that it came to sideline all the international sparkling wines and prove once again the enormous potential of the Xinomavro variety.

For Paragka Kir-Yiannis sparkling, the grapes were harvested from vineyards at an altitude of 600m. of the Amyntaio PDO zone. The soil has sandy soils, which contribute to the production of grapes with a very rich aromatic character and finesse. The first alcoholic fermentation is done with the classic method of sparkling wines, while the second one takes place in stainless steel tanks and it is precisely there that intense bubbles are created. The wine then remains for 5 months in contact with its lees and is then bottled to age for another 5 months in the bottle!

If you are not used to Xinomavro in its sparkling version, right now we are giving you one more reason to fully understand that this variety is so powerful, even for the production of truly complex and luxurious sparkling wines!

Tastes Like

Golden shiny color with very elegant and countless bubbles.
Complex on the nose with delicate stone fruit aromas, mainly apricot and peach, with strong hints of white flowers. Jasmine, orange blossom, primrose, and tangerine. Intense and persistent freshness.

In the mouth, the freshness follows that of the nose, with rich and refreshing long-lasting bubbles. The acidity is noticeable but in perfect balance with the fruity aromas of stone fruits and the subtle sweetness.

ΠΑΡΑΓΚΑ SPARKLING BRUT - KTIMA KYR-YIANNI

It is consumed as an aperitif on its own, with a variety of fruits, but it stands magically next to any kind of finger food and steamed mussels!

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
