Konstantinos Manouras wants to create his version of what Cretan wines are and can be. And he started it in 2020 with a wine collective through which he celebrates the terroir of the Cretan land and the indigenous varieties. He cultivates grapes in privately owned and non-owned vineyards, with zero use of heavy metals and pesticides, with absolute respect for the anhydrous pre-phylloxera vineyards of Heraklion. He places particular emphasis on the cooperation of each variety with the different microclimate in which it is found each time and for this reason, he makes very careful vinifications.
Plyto Thrapsathiri comes from a 5.5-acre vineyard, over 120 years old. Plyto 65% and Thrapsathiri 35% are fermented in stainless steel tanks with indigenous yeast and their combination creates an absolutely gastronomic wine, which you can enjoy as it is or with a huge variety of flavors.
Its alcohol is perfectly integrated into the whole, the palette is very special and all you have to do is get a few bottles while it's still available, so you can enjoy it with all the Christmas goodies on the table.
