Why do we love it?

Baron de Ladoucette Pouilly-Fumé 2023 is undoubtedly one of the most renowned Sauvignon Blancs from the Loire! More specifically, it’s one of those rare wines that truly deliver everything the unique terroir promises—combined with this beloved white grape—without costing a fortune. Its deep-rooted history and masterful winemaking, honed through generations of experience, are certainly among the reasons this wine stands out.

The estate’s story begins in 1787, when Count Lafond acquired it from the daughter of King Louis XV of France. Since then, and to this day, the estate has remained in the hands of his

descendants, preserving a centuries-old tradition. Baron Patrick de Ladoucette, heir to a winemaking dynasty dating back to the 18th century, personally oversees every stage of production, crafting some of the world’s most iconic Sauvignon Blancs.

For Baron de Ladoucette Pouilly-Fumé 2023, the Sauvignon Blanc grapes come from vines aged 25 to 35 years, rooted in soils rich in clay, limestone, flint, and marine fossils—elements that give the wine its signature “fumé” character. The harvest is done by hand, and fermentation takes place in stainless steel tanks, where the wine also matures for 3 to 6 months with regular bâtonnage. The result is a wine that retains all its primary aromas, with a rich, textured mouthfeel.

Tastes Like

On the nose, it starts off subtle, gradually revealing aromas of white flowers, mangoes, pears, and fresh peaches. There’s also an underlying note of minerality and a hint of smokiness.

On the palate, it’s medium-bodied with crisp acidity. Citrus fruits intertwine with notes of dough, peach, and flint.

PAIR IT

Pair it with seafood (shellfish, oysters, shrimp), grilled white fish with lemon and herbs, goat cheeses (like Crottin de Chavignol), or asparagus risotto.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
