Today, his sons carry on the family tradition, committed to sustainable viticulture and a winemaking philosophy that emphasizes the unique character of both grape and soil.

For Cuvée Les Alouettes Pouilly-Fumé 2022 from Domaine Jean-Max Roger, Sauvignon Blanc grapes are sourced from carefully selected low-yielding vines aged 6 to 40 years, planted on the highest slopes of the vineyard—hence the name “Les Alouettes”. The diverse soils—rich in limestone, flint, and marine fossils—impart a distinctive minerality and the subtle smoky character that made Pouilly-Fumé famous. Fermentation takes place in temperature-controlled stainless-steel tanks using ambient yeasts, followed by aging on the lees with regular bâtonnage for about 7 months. The result is a wine with a rich texture, signature minerality, and stunning structure.

Tastes Like

On the nose, it starts off shy, with delicate aromas of white flowers like orange blossom and almond blossom. As it opens up, notes of pear, white peach, lemon, grapefruit, pineapple, and asparagus emerge, along with subtle hints of smoke and wet stone.

On the palate, it’s medium-bodied with crisp acidity. Flavors of white peach, pear, green apple, and pineapple take center stage, while lemon, grapefruit, and citron add brightness. Doughy notes and a flinty edge bring complexity and character to the finish.

Try it with asparagus au gratin with goat cheese, green salad with citrus vinaigrette and grilled goat cheese, steamed white fish fillet with chives and lemon

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
