Pouilly-Fume Vitae by Domaine du Bouchot is a pure and clear expression of the unique microclimate of the region but also of the most famous white variety, Sauvignon Blanc. Indigenous yeasts, natural winemaking, and biodynamic cultivation give a wine of unparalleled finesse that every Sauvignon Blanc lover should try! French sommeliers voted in the Top 10 Puilly-Fumes in the market.

Domaine du Bouchot was the first to implement organic farming in the region and since 2008 has turned to biodynamic cultivation. The couple Rachel and Pascal Kerbiquet, began cultivating the vineyards of Cote des Pres and Fouinelles in 1985. Since then, they have expanded to include Vaurigny and Papillons. The combination of different soils adds another dimension to their wines, which they naturally vinify, with native yeasts. Pouilly-Fume Vitae comes from the vineyards of Les Champs du Roin Haut, La Côte des Prés, Les Déserts, Le Domaine du Bouchot, Les Champs Frisés, Les Genièvres, Les Bascoins, and Les Champs de la Croix, from 40-year-old vineyards. The result is impressive and captivates lovers of good wine.

with oysters, bbq oily big fish or with a la creme chicken with asparangus.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
