Psithiros 2024 White from Silva Daskalaki Winery captures the expressive, fragrant essence of Crete. Made entirely from Muscat of Spina, it stands out immediately for its vivid aromatics and its lively, refreshing structure. Even for those already familiar with the variety, this wine presents a voice of its own, defined by bright floral notes, generous fruit and crisp energy.

Silva Daskalaki Winery is based in the village of Siva in Heraklion, within the historic PDO Dafnes zone, a region with deep viticultural traditions. The name “Silva” is derived directly from the local toponym, but it also carries a symbolic reference to a Dionysian spirit associated with joy and vitality. In 1998, Irini Daskalaki Xenogiannaki undertook the renewal of her family’s vineyards, setting a clear aim: to create wines that convey the character of their origin with authenticity and precision. The family’s viticultural history reaches back to 1920, and their continued dedication to quality and craftsmanship remains evident in each wine they produce.

Psithiros 2024 is sourced from vineyards situated at altitudes ranging from 150 to 700 meters across Heraklion. Fermentation takes place in stainless steel under controlled temperatures to safeguard the variety’s freshness, while a short maturation on fine lees for about two months adds volume and subtle texture without compromising the wine’s clarity and elegance. The Muscat of Spina thrives in this terroir, expressing both aromatic purity and a distinctive sense of place.

 

 

Tastes Like

On the nose, the wine opens with the characteristic floral signature of the variety: orange blossom, rose and jasmine, all supported by gentle layers of peach, pear and a touch of lemon zest.

The palate is medium‑bodied and marked by vibrant acidity, unfolding flavours of citrus, green apple, ripe stone fruit and a delicate hint of rose. The brief lees contact contributes a soft, creamy nuance that rounds out the wine without diminishing its freshness.

Irini Daskalaki Xenogiannaki, in 1998 started the revival of the family vineyards, continuing a tradition that has its roots back to 1920. The winery Silva Daskalaki is located in the village of Siva, in the prefecture of Heraklion with its name coming from God Siva ( Dionysos), and the vines belong to the PDO Dafnes. The long-standing secrets of the family are combined with new techniques and result in unique wines of local and international varieties, which highlight the special terroir of the area.

Pair it with sautéed shrimp with lemon and herbs, zucchini fritters and fresh goat cheeses

Shrimps with garlic and lemon

  • 500 gr. jumbo sized shrimps. Defrost them if they are frozen. If they are not pre-peeled, peel them when they have defrosted.)
  • 2 tbsps. olive oil
  • 1 tbsp. butter
  • 2 cloves of garlic, chopped
  • 2 tbsps. fresh lemon juice
  • ½ tbsp. lemon zest
  • salt

If you use frozen shrimps, let them defrost overnight in the fridge. Drain the shrimps and dry them with kitchen towel.

 Zest a large lemon and then squeeze the juice to give at least 2 tablespoons of juice and close to half a tablespoon of lemon zest. Clean the garlic and finely chop  it.

 Heat the olive oil in medium to high heat, then add the butter to melt.

Add the shrimps to a single layer and leave until they start getting pink color at the edges, no longer than 1-2 minutes.

Turn the shrimps on the other side and add the chopped garlic. Continue cooking for another 3-4 minutes. Pour in the lemon juice, add the lemon zest and salt to taste and mix to cover the shrimps with the sauce.

Serve immediately
