Let's dive into the fascinating world of the Bründlmayer winery. Willi Bründlmayer, along with his wife Edwige, Thomas Klinger, and Master of Wine Andreas Wickhoff, runs this esteemed family estate. Willi Bründlmayer is a founding member of the "Österreichische Traditionsweingüter" association, which is dedicated to showcasing the unique characteristics of regions, soils, climates, and grape varieties in their wines. 

Willi firmly believes that wine reflects everything about its environment—the soil, the heat and cold, the storms and rain, the landscape, and the people who deal with it. It's worth noting that both Jancis Robinson MW and Robert Parker have praised Willi and his wines with high acclaim.  

The Bründlmayer family owns 10 hectares in the renowned "Zöbinger Heiligenstein" vineyard, situated at an altitude of 230-345 meters. Since the 1920s, they have been cultivating this land, laying the foundations for the vineyard that produces the exceptional Riesling Heiligenstein Alte Reben. Today, the vines are on average 50 years old, with the oldest reaching up to 75 years. 

Older vines are less productive but yield fruit with high concentration, a hallmark of Bründlmayer's Riesling Heiligenstein Alte Reben 2022. The wine ferments and matures in stainless steel tanks, ensuring the ultimate preservation and expression of the variety and terroir.

Tastes Like

The wine has a pale lemon color and a youthful, restrained first impression. The complex bouquet unfolds gradually, revealing citrus peels, fresh white peaches, and apples, complemented by notes of white flowers and green tea.

On the palate, it offers a medium to full body, accentuated acidity, and a tight structure brimming with stone fruits and citrus flavors.

RIESLING HEILIGENSTEIN ALTE REBEN 2022 - BRÜNDLMAYER

with grilled seabream, Viennese schnitzel with potato salad, oven baked chicken with thyme and lemon, salmon with lime, soy and honey glaze 

Grilled sea bass with spicy soy sauce

  • 2 seabasses (500 grams each), with guts and scales removed
  • olive oil
  • salt and pepper
  • a handful of fresh herbs (rosemary, oregano)
  • 2 lemons or 1 orange
  • 10 g of fresh ginger in thin slices
  • Extra slices of lemon or lime for serving
  •  For the sauce
  • 2 tbsps. of olive oil
  • 2-3 cloves of garlic, finely chopped
  • 1/2 to 1 fresh hot pepper, in thin slices (depends on your preferences)
  • 1/2 cup soy sauce
  • 1/2 tsp. of sugar

Preheat your barbecue or light the charcoal. Gut the fish, remove the scales, and wipe it well. Make 3-4 vertical, to the bone incisions on each side of the fish. Brush the fish, in and out, with olive oil. Season with salt and pepper, in and out. Put in the fish's belly some fresh herbs and slices of lemon or orange. Put slices of ginger in the incisions you made earlier.

Place the fish in a baking pan. After the bbq is ready or after the grill has warmed up well, bake for 5-7 minutes and then turn it on the other side for another 5 minutes.

For the sauce, place a small saucepan on medium to high heat. Add the olive oil and when it's heated up, add the garlic and the chili peppers. Cook for 30 seconds. Add the soy sauce and sugar and allow to boil for 1 minute.

 Pour the sauce over the fish and serve with slices of lemon.
