Mavrofilero is the darker clone of the variety, and in the right hands, it can become a wine with aromas of rose, jasmine, and herbs, paired with a razor-sharp acidity that means business. Tasty and gastronomic, it pairs beautifully with a wide range of dishes — and the best part? It ages magically.

The winery of George Skouras, just outside Nemea, is a temple of precision and boldness. While Agiorgitiko takes center stage among the cultivated varieties, it’s complemented by international grapes like Cabernet Sauvignon, Syrah, and Viognier, as well as aromatic Greek ones like Moschofilero and the rare Mavrofilero. Each label captures the essence of the variety and the terroir, offering complexity and structure in every sip.

Salto is made exclusively from Mavrofilero, sourced from selected mountainous vineyards with low yields that guarantee quality and aromatic expression. The free-run juice ferments with indigenous yeasts that work quietly, resulting in a wine with nerve and depth — unlike any of its siblings.

Salto from Domaine Skouras boasts impressive aromas of lemon, lime, grapefruit, jasmine, white rose, and lemon zest, with subtle notes of verbena and a touch of minerality.

On the palate, it has a light to medium body, with sharp acidity and a refreshing feel. Flavors of green apple, lemon peel, juicy lime, grapefruit, and white rose fill up the mouth.

PAIR IT

Pair it with lemon risotto, spinach pie, marinated fish, and salty white cheeses.

Tabbouleh salad

  • 1 cup of couscous
  • salt and freshly ground black pepper
  • juice of a lemon
  • 3 tablespoons of olive oil
  • 1 cup of chopped parsley
  • 1/2 cup chopped coriander
  • 2 tbsps chopped fresh mint
  • 2 ripe tomatoes, cut into cubes
  • 3 fresh onions, finely chopped

Heat water, after salting it first,  in a medium-sized pot and leave it to boil. Add the couscous and leave to moderate heat for 7 to 8 minutes. Drain the couscous and let it cool down. In the meantime, in a small bowl, mix lemon juice with olive oil. Add salt and pepper.

In a large bowl, mix couscous, parsley, coriander, mint, tomatoes and onions. Add the mixture of lemon juice and olive oil and salt and pepper. Leave it for about 20 minutes before serving to marinate.
