Domaine Jean-Max Roger is located in the village of Bué, in the heart of Sancerre, where the Roger family has been growing vines since the 17th century. In 1970, Jean-Max and his wife began cultivating what would become a 35-hectare estate spanning the appellations of Sancerre, Menetou-Salon, and Pouilly-Fumé. Their work quickly stood out for its commitment to low-intervention, eco-friendly farming, with a strong focus on soil health and terroir expression. The estate’s diverse soils gave them a unique advantage, helping them rise to the top tier of Sancerre producers. Today, their sons Thibault and Etienne carry on the tradition, crafting both classic blends and single-vineyard wines with meticulous attention to detail and a clear goal: to let the land speak through the wine.

Sancerre Cuvée Les Caillottes 2024 Domaine Jean Max Roger is a blend of grapes from multiple plots, with vines aged 6 to 40 years, located in the villages of Amigny, Sancerre, and Vinon—all dominated by the stony limestone soils known as caillottes (hence the wine’s name). Grapes are carefully hand-harvested and fermented in stainless steel tanks at controlled temperatures to preserve their aromatic freshness. The wine is then aged on the lees with regular bâtonnage for 4 to 6 months, adding depth and a signature texture.

This wine embodies the quiet confidence of Sancerre—it doesn’t demand attention, but it captivates every sip. On the nose, Sancerre Cuvée Les Caillottes 2024 – Jean Max Roger opens with striking aromas of lemon, grapefruit, asparagus, orange blossom, citron, and green apple, all wrapped in subtle hints of wet stone.

Enjoy it with grilled lobster with lemon-herb sauce, fresh oysters with lemon, steamed dentex fillet with white wine sauce, peas, and fennel.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
