Boutari family along with their oenologists started in 1980 to explore the vineyard of Santorini so that in 1989 they released their first Assyrtiko. Their beautiful winery is located in the area of Megalochori and their vineyards are 50-60 years old. It is worth telling you that the winery has been on the list of the most beautiful wineries in the world, based on Wine & Spirits Magazine, for over 10 consecutive years. For Santorini, the grapes are harvested at the right time and cooled until they are vinified, thus preserving the freshness and aromas of the wine. The wine is fermented with selected yeasts and then matured with its fine wine lees. The result is rich, oily, with a strong mineral character.

Tastes Like
It has medium lemon color and intense aromas of lemon, tobacco, peach, honey, orange, sourdough bread, and wet stone. Rich mouthfeel, with impressive concentration and aromas of ripe citrus, peach, and hints of saltiness and minerality. It has a moderate body and sharp acidity.
