Anhydrous Santorini 2023 is the winery’s signature label and the very first creation by Apostolos Mountrichas on the island. It’s crafted from a refined blend of Santorini’s emblematic white grape varieties Assyrtiko, Aidani, and Athiri sourced from own-rooted vineyards in Emporio, Kamari, Karterados, and Fira.

Fermented with native yeasts in stainless steel tanks, the wine preserves the character and freshness of the varieties. It also spent time on fine lees, enhancing both texture and the bold expression of the island’s volcanic soil.

Tastes Like

On the nose, it opens with aromas of white peach, lime, lemon, and pineapple, framed by subtle hints of chamomile and a delicate mineral edge.


On the palate, it’s medium-bodied with crisp acidity. Flavors of lemon, peach, and pineapple take the lead, followed by notes of apricot and lime, finishing with a refined salty aftertaste that reflects the island’s distinctive terroir.

Perfect with Santorini fava with capers and finely chopped onion, fried anchovies or smelt, or green salads with citrus fruits

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
