Why do we love it?

Santorini - Vassaltis Vineyards has impressed us with its mineral character and dense fruit. Fortunately it is also available in a magnum bottle so this pleasure can last longer!

Yiannis Valambous, Ilias Roussakis, and Yiannis Papaoikonomou are among the island's kindest and most likeable personalities. They have invested money, and personal effort and have given their soul because they stubbornly refuse to give it up. Santorini's vineyard can still be saved from tourist encroachment. The vision of such people creates enormous optimism and of course, the result confirms all of the above!

Their Assyrtiko is now established among the best on the island and has conquered the planet. Its name is inspired by the black volcanic rock formed by the cooling of basaltic lava that covered the island of Santorini after the volcano erupted almost 4,000 years ago.

Vasaltis Winery's Santorini 2022 gives Assyrtiko the absolute leading role. The meager yield per hectare which does not exceed 150-200 kg/hectare ensures the concentration of the fruit. Aging on the lees for 6 months, with regular batonnage, added volume and complexity, making it a highly enjoyable Santorini 5 years from now. Rich and exuberant, it perfectly incorporates all the mineral characteristics of the island claiming a place among the big names.

The magnum bottle will loosen your hands at the Sunday table. Just prepare a stira fish, light the coals and you're good to go. Of course, don't be surprised if it is consumed with the first appetizers... yes, it is so delicious!

Tastes Like

It has pale lemon color with greenish hues. On the nose, it has intense aromas of unripe yellow fruits and citrus on a background of diffused minerality. Peach, citron, pear, honeysuckle and grapefruit aromas are accompanied by wet stone and flint.

In the mouth, it is rich, with creamy texture and intensity that awakens the palate. The pronounced acidity adds nerve while hints of honey make the citrus fruit sweeter on the palate.

SANTORINI MAGNUM 2022 - VASSALTIS VINEYARDS

PAIR IT

Pair it with grilled fish or seafood dishes.

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
