Our Santorini Vassaltis 2021 has been meticulously aged in our cellar, where it has developed its rich, complex flavors under perfect conditions. Call them bold, call them visionaries — three young individuals, Giannis Valambous, Ilias Roussakis, and Giannis Papaoikonomou, dared to invest both money and countless hours of personal effort in crisis-stricken Greece, choosing an island whose vineyards are constantly shrinking due to growing tourism development.

One of the newest wineries in Santorini is making an Assyrtiko that has already established itself among the island’s finest and is gaining international recognition. Named after the black volcanic rock formed from the cooling of basaltic lava that covered Santorini after a volcanic eruption nearly 4,000 years ago, Vassaltis Winery is now producing exceptional wines and welcoming countless visitors each year.

Very different from its 2015 and 2017 vintages, Santorini 2021 by Vassaltis gives center stage to the island’s terroir and the Assyrtiko variety. With a particularly low yield that doesn’t exceed 150–200 kg per stremma (0.1 hectare), the result is intensely concentrated fruit. The 6-month lees aging, with regular bâtonnage, added richness and complexity, shaping an exquisitely enjoyable Santorini — ready to drink now or even in 5 years’ time. Rich and full-bodied, this wine seamlessly blends with the island’s distinctive mineral profile, earning its rightful place among the finest vintages.

We’ve meticulously cellared it at Botilia, ensuring it ages to perfection. Now, the moment has arrived to savor this exquisite wine at its peak!

Tastes Like

Santorini 2021 from Vassaltis Winery boasts a bright lemon color. Leading notes of petrol and honey are complemented by hints of peach, honeysuckle, orange zest, toasted sourdough bread and grapefruit, along with the distinctive scents of wet stone and flint.

On the palate, it is rich and creamy, delivering an intensity that awakens the senses. The pronounced acidity adds a lively edge, while a touch of honey softens the citrus flavors. This is all beautifully balanced by a savory, long-lasting finish.

Pair it with grilled fish or seafood dishes.

Shrimps with peas and ginger

  • 3 tbsps. of olive oil
  • 300 grams of mushrooms cut into four
  • 1/3 cup of peas
  • 8 large shrimps peeled
  • 1 tsp. grated ginger
  • 3 tbsps. of soy sauce
  • 1 tbsp. vinegar of white wine

Heat 2 tablespoons of olive oil in a pan, on high heat. Add the mushrooms and let them soften by stirring, about 5 minutes. Remove them from the pan and put them on an absorbent paper.

Add the peas to the pan and cook by stirring for about 2 minutes. Remove them from the pan and put them along with the mushrooms on the absorbent paper.

Add 1 tablespoon of olive oil to the pan. Then put the shrimps and chopped ginger in the pan. Reduce the heat to moderate and cook until the shrimp becomes opaque, about 4 minutes.

Return all vegetables to the pan, add soy sauce and white wine vinegar. Cook until they are warm enough, about 4 minutes.
