Why do we love it?
 
When you want to experience the best of Chenin Blanc you begin with Savennières and when you want to experience the best of Savennières you begin with Joly”. This is how Wine Enthusiast begins its review of Savennières Les Vieux Clos 2022 Vignobles de la Coulee de Serrant, and later on it embellishes it a little more with a full 96 points. At this point, let us tell you something interesting: the bottles are super limited (and for this reason only one bottle/order is available!).

We really think that Nicolas Joly needs no introduction. He is one of the pioneers and “teachers” of Biodynamic cultivation, one of the most iconic winemakers, not only in the Loire but also in the world, while his wines are considered legendary and super hard to find. The foundation of their winery, Vignobles de la Coulee de Serrant, is located in Savennières, and Chenin Blanc is the variety that truly shines under their guidance..

Specifically, for Savennières Les Vieux Clos 2022 Vignobles de la Coulee de Serrant, the grapes come from vines that are approximately 20 years old. The soils of Les Clos consist mainly of slate but also of quartz and to a lesser extent of sand. The harvest is done in 4-5 different passes so that the grapes are only picked when they have reached optimum ripeness, with some berries affected by botrytis (noble rot).

Joly also believes that Chenin – along with Riesling – is one of the very few grape varieties that can fully express their personality only through a fairly advanced ripeness, which also includes “noble rot”. The wine undergoes fermentation using indigenous yeasts and matures in aged oak barrels for approximately 5 to 9 months. This process yields an impressive concentration and a distinctive complexity, a hallmark of the finest white wines globally..

Tastes Like

Medium lemon color and an impressively complex nose with aromas of dried apricot, peach, sweet apple, tangerine zest, lemon blossom, chamomile, roasted pineapple and almond.

On the palate, the shocking concentration of fruit is perfectly balanced by the sharp acidity and robust structure. Minerality and savoury notes add further complexity.

SAVENNIERES LES VIEUX CLOS 2022 VIGNOBLES DE LA COULEE DE SERRANT

with aged yellow cheeses, oysters, roast chicken with herbs, asparagus or mushrooms.

Chicken Piccata

  • 2 chicken fillets (breast or thigh)
  • 3 tbsps. of butter
  • 3 juicy lemons
  • 150 ml. white wine (preferably Sauvignon blanc or Assyrtiko)
  • 150 ml. chicken broth, hot
  • 1 bunch of parsley
  • Olive oil
  • Flour for all purposes
  • Capers
  • Salt
  • Freshly ground pepper

First mush up, in a mortar, a pinch of salt, a few peppercorns, some lemon zest and 1 1/ tablespoon of olive oil.

Cut the fillets along with a sharp knife, creating 2 slices of each breast.

Brush the fillets with the mortar mixture by lightly massage the chicken and then flour the fillets.

In a large pan add 2 tablespoons of butter and 2 tablespoons of olive oil. When they heat up, we sauté the chicken until it gets a nice golden color and we remove it from the pan.

In the same pan add the broth and the wine. Allow to boil and then put the fillets back into the pan.

Leave it to high heat until the sauce begins to thicken slightly.  As long as the sauce cools, it will thicken even more, so do not let the whole sauce evaporate.

Add 1 tablespoon of butter, the lemon juice from the two lemons and a few slices of lemon, shake the pan and add the capers.

Remove it from the fire, add chopped parsley and serve with thin pasta, rice or boiled potatoes!
