Why do we love it?

Seiradi White PFC (Paros Farming Community) is a vibrant white wine from Paros, showcasing the potential of Monemvasia through a modern, clean, and characterful vinification.

Made from 100% Monemvasia, a variety deeply rooted in Cycladic tradition and especially in Paros, this wine is the result of a fresh take by the Paros Farming Community, led by Dimitris Mansolas. The grapes are sourced from mountain vineyards, and the wine is fermented in stainless steel tanks at low temperatures to preserve its primary aromas. It then matures on its lees for three months, with weekly batonnage, gaining texture and complexity.

Tastes Like

In the glass, Seiradi White PFC has a bright straw-yellow colour with greenish hues.

On the nose, it reveals herbal and floral aromas, followed by citrus notes like grapefruit and lime, along with tropical hints of unripe pineapple and pear.

On the palate, it has light to medium body and lively acidity. Citrus fruits blend with green fruit and white tea notes, while subtle mineral undertones round out the flavour profile.

PAIR IT

Pair it with crispy fried whitebait, shellfish and seafood, herb-laced salads, or courgette fritters.

Tabbouleh salad

  • 1 cup of couscous
  • salt and freshly ground black pepper
  • juice of a lemon
  • 3 tablespoons of olive oil
  • 1 cup of chopped parsley
  • 1/2 cup chopped coriander
  • 2 tbsps chopped fresh mint
  • 2 ripe tomatoes, cut into cubes
  • 3 fresh onions, finely chopped

Heat water, after salting it first,  in a medium-sized pot and leave it to boil. Add the couscous and leave to moderate heat for 7 to 8 minutes. Drain the couscous and let it cool down. In the meantime, in a small bowl, mix lemon juice with olive oil. Add salt and pepper.

In a large bowl, mix couscous, parsley, coriander, mint, tomatoes and onions. Add the mixture of lemon juice and olive oil and salt and pepper. Leave it for about 20 minutes before serving to marinate.
