Why do we love it?

MAD Selection is a dry white wine from Tokaj, which will make you forget for a while about its famous sweet wines! If you don't recognize the area, Tokaj is one of the oldest and most famous wine regions in Europe, with Tokaj Aszu sweet wines being its brightest gems (and costing almost as much as the real thing). So it's time to learn that in this region, great dry white wines are also made, with a minerality reminiscent of a purebred German Riesling.

One of them is MAD Selection. The MAD team recognized early on the valuable terroir of Tokaj and therefore in 2009, decided to work closely with the local producers of the area, on the MAD project. Their common philosophy was to express the special terroir and highlight its local rare varieties! Producers, until this day, entrust their vineyards to the team and MAD takes care of them all, from the grape to the wine.

MAD Selection comes from selected vineyards of Tokaj, with volcanic soils, spectacularly highlighting their mineral character. It consists mainly of the basic local variety Furmint, with an addition of Hárslevelű (we recommend you not to pronounce it). The harvest was completed manually and after being partially fermented in a barrel with native yeasts, it gained a distinctive spicy character.

Tastes Like

It has a yellow color with golden highlights. Intense and complex nose, with minerality in the foreground and ripe white stone fruit, mainly white peach, enhancing the whole. There is no shortage of citrus fruits, while then its peppery character develops subtly from fermentation in the barrel.

In the mouth it is medium (+) volume, with dominant elements of intense, ripe fruit, balanced and with a high. The minerality lasts a long time in the aftertaste as well.

PAIR IT

Pair it with pasta carbonara, risotto with mushrooms, or with grilled fish.

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
