Why do we love it?

We have discovered the totally collectible white wine that will make a break at this year's celebrations and has one of the strangest names you've heard. Wait until you take a look at the bottle...

The Arlekinon Chora Winery made its appearance recently, but has already won everyone's attention. The King's Court of Fthia 2017 (yes that is its name) is its pride and joy! Limited production, just 1,200 bottles, with an impressive label, it has already begun to be discussed among wine-lovers. Assyrtiko (85%) and Batiki (15%) meet in an unexpected blend. What is Batiki? Local, neglected and recently rare variety of Thessaly which, with proper care, shows signs of greatness.

A single dry vineyard at an altitude of 380 m at Narthakio Mountain, hardens the vines of the two varieties, forcing them to yields of 400 kg / acre. The late harvest gives a highly condensed "grape juice" that is the basis of The King’s Court of Fthia 2016 Arkekinon Chora, a wine that is unlikely to go unnoticed.

 50% of the particular blend ferments and stays in new French oak 500 lt barrels for 5 months. The rest remains in the tank for 10 months with the lees and continuous battonage. The two blends were mixed and bottled with a unique label. And after they rested for as long as they needed, they are ready to be enjoyed.

Next to stuffed turkeys, hams with honey and pate they will be the ultimate pairing.

And you do not have to hurry. It will wait at least for the next 3-4 years.

Tastes Like

Medium lemon color with golden shades in the glass.

Nose of moderate (+) aromatic intensity with aromas of lemon, caramelized bergamot, melon, peach, honey, honeycomb and toast. After a while hints of hazelnut, vanilla, butter and biscuit make their appearance.

On the palate it has a moderate (+) volume body, balanced acidity and concentrated aromas of ripe fruit such as mango, peach, quince, lemon, melon and grapefruit. Hints of caramel, honey, vanilla, toasted brioche and candied orange complement the already complex and impressive palate. The caramel aftertaste is long and persistent.

PAIR IT

Pair with turkey stuffed with chestnuts, duck with orange or pork leg with honey in the oven.

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
