Why do we love it?

The Young Winemakers 2020 Papargyriou Winery is released for the last time since the… young ones are not that young anymore! The incredibly successful experiment of the two kids proves that they now know very well what they are doing. In the farewell vintage of 2020, they went all in by making a wine that, apart from being collectible, is also perfect, juicy and complex.

The young winemakers may not be that young anymore but the fact that they grew up between barrels and grapes and loved the wine from the cradle is something that you can really taste in every sip. They definitely had a good teacher, Yiannis Papargyriou! Since in the first vintage the late harvest was done by mistake (the vine plot was forgotten during the harvest) they decided to go with it. Besides, Papargyriou is very good at this, and let’s be honest, the apple doesn’t fall far from the tree! The special blend of Touriga and Agiorgitiko aged for 12 months in second-hand French oak barrels and then it was bottled in just 1,300 beautiful bottles that, as every year, were numbered by hand.

Intense, over-concentrated, the Young Winemakers 2020 Papargyriou Winery is one of those wines that when you taste it, you are most likely to say: Who did you say did this? No way!

Tastes Like

Young Winemakers 2020 Papargyriou Winery has deep purple, almost black color! Nose of moderate (+) aromatic intensity with sour cherry, cherry, cassis, vanilla, violet, and lavender having the first say! After a while, cinnamon, nutmeg, marjoram, coffee and toffee flood the nose.

On the palate, it is full-bodied with balanced acidity and medium but juicy tannins! Yes, the alcohol is more than enough but it's easily camouflaged by the density of the fruit! Sour cherry, cherry, plum, and blackberry, which you almost chew in every sip! Pepper, cinnamon, vanilla, tea, cocoa, lavender, rosemary will seduce you, and…that will be the end of the first glass.

Pair it with roast beef or wild boar stew with vinsanto sauce and spices.

Willd boar with vinsanto and citrus

1500 gr. wild boar


For the marinade
500 ml. wine vintage
200 ml. Red wine
1½ tablespoons of honey
3 tablespoons of balsamic
2 tablespoons of soy sauce
1 tablespoon corn flour
2-3 rinds of tangerines, oranges, grapefruits, bitter orange
1 sprig of rosemary
2-3 cloves
4 berries of all spice
1 teaspoon of mixed peppercorns
Taragon
2 onions
80 gr. butter
Salt

For the marinade:
Wash and clean the wild boar very well, and remove any hairs.
In a pot, put all the ingredients of the marinade and mix well. Place the pieces of wild boar inside.
Cover with a towel and leave either in the fridge or in a cold, dry environment. Let the wild boar marinate for at least 12 hours.


Cooking:
Remove the meat from the marinade and keep it aside.
Put a large casserole to high heat and saute the meat.
Do not put any oily substance because the meat will release some liquids.
Once the liquids evaporate, add the butter and saute the meat until it gets an even, brown color.
Add the onions finely chopped or crushed. Once the onions get a golden color, pour in the marinade.
Lower the fire. Add salt and about 2 cups of hot water.
Braise the wild boar until the sauce thickens and the meat is tender.
Serve with brown rice with added pine nuts and raisins.
