Why do we love it?

The ethereal elegance of Burgundy is magnificently captured in the Domaine Simon Bize Savigny les Beaune Rouge 2016. Juicy fruit, silky tannins and all the seductive character of Pinot Noir prove why all the top Pinots in the world want to be reminiscent of the Burgundians!

The winery was started in 1880 by Simon Bize who started buying and planting vineyards at key sites in Cotes de Beaune. In 1950 his grandson decided to bottle wine under his name and so little by little the winery began to establish its brand and grow. Now at the helm is the fourth generation of the winery. As you well understand this is a boutique and family winery that makes limited bottles from some of the most important vineyards and villages of Burgundy. The Domaine Simon Bize Savigny les Beaune Rouge 2016 is one of them and it is simply wonderful.

The grapes come from vineyards planted between 1965 and 1978. After the strict sorting, the grapes are fermented mainly in whole bunches, with ambient yeasts, in oak casks. After fermentation, the wine ages in French oak barrels (mainly old). Finally, it is bottled unfiltered. The main concern of its creators is to express as best as possible the terroir and the elegance of Pinot Noir.

Domaine Simon Bize Savigny les Beaune Rouge 2016 has medium ruby color and impressive aromas of red fruits such as strawberry, raspberry, cranberry and cherry. Notes of cedar, green pepper, nutmeg, tea and forest floor complete the impressive bouquet.

In the mouth it has medium body, crisp acidity and silky tannins. Juicy strawberry, ripe raspberry, sour cherry are mixed with earthy and discreet spicy notes

Pairs very well with risotto with truffle, beef fillet with aromatic butter, dusky grouper with mushrooms and parmesan puree

Tagliatelle with mushroom sauce

  • ½ kg of fresh mushrooms
  • 1 clove of garlic chopped
  • 1 tbsp. of lemon juice
  • 3 tbsps. of olive oil
  • 1 tsp. of salt
  • freshly ground pepper
  • 1 tbsp. of chopped parsley
  • 1/2 kg tagliatelle pasta
  • 1 glass of white wine
  • 1/4 cup of cream
  • 3 tbsps. Parmesan cheese and as much as you like for serving

Clean the mushrooms. Cut the edges and then slice them and mix them with the lemon juice.

In a large frying pan add the olive oil and put it in a medium - high heat and when it heats up well, add the garlic stirring well to keep it from sticking and not burn. Add the mushrooms, stir well and cover the pan with a lid. Sauté for 4 minutes stirring frequently.

Remove the lid and add salt and pepper according to your preferences. Stir occasionally and   allow them to absorb their juices and become brown (about 5 minutes).

At the same time, in a pot, boil some water and prepare the tagliatelle according to the instructions of their packaging.

Pour a glass of white wine in the pan, preferably from the wine with which you will accompany the plate.

Add cream and grated Parmesan and let it simmer by lowering the heat, for 3 -4 minutes until it thickens. Remove the pan from the fire, add the pasta, mix well and add the parsley. Serve with grated parmesan cheese.
