Υiannis Papargyriou leaves nothing to chance, nothing without passing through his own hands first. Every decision, from the vineyard to the very last moment in the cellar, is infused with the passion that defines him. When he told us he was working with Zakynthino, in such a tiny production, only 600 bottles (!) from the 2025 harvest, we couldn’t help but wonder what he was up to this time.
The answer came with the first sip, accompanied by that kind of silence only two things can provoke: something exceptionally good, or something exceptionally bad. Fortunately for all of us, it was the former. For The Rare Zakynthino 2025, fermentation took place in 400- and 500-liter French oak barrels, a mix of new and used, where the wine remained for 3 months to mature. The technique he applied delivered exemplary texture, depth, and an impressive aromatic complexity.
