Why do we love it?

With The Rare Zakynthino 2025, Υiannis Papargyriou once again does what he knows best: leaving us speechless. This time with something truly rare, a wine that feels born from memory, place, and an obsession with detail. Yes, it really is as special as it sounds.

Υiannis Papargyriou leaves nothing to chance, nothing without passing through his own hands first. Every decision, from the vineyard to the very last moment in the cellar, is infused with the passion that defines him. When he told us he was working with Zakynthino, in such a tiny production, only 600 bottles (!) from the 2025 harvest, we couldn’t help but wonder what he was up to this time.

The answer came with the first sip, accompanied by that kind of silence only two things can provoke: something exceptionally good, or something exceptionally bad. Fortunately for all of us, it was the former. For The Rare Zakynthino 2025, fermentation took place in 400- and 500-liter French oak barrels, a mix of new and used, where the wine remained for 3 months to mature. The technique he applied delivered exemplary texture, depth, and an impressive aromatic complexity.

You may not have tried another Zakynthino before; its rarity makes that likely, but the fact that Papargyriou chose to work with it is reason enough to discover it through The Rare Zakynthino 2025 Papargyriou Winery.

Tastes Like

On the nose, it shows complex aromas of peach, pear, apricot, lemon, citron, and lime. Notes of dough, brioche, and vanilla reveal its time in barrel.

On the palate, it has a medium (+) body, crisp acidity, and a creamy, oily texture. Ripe peaches, honey, and toasted bread add even more complexity to the flavor.

RARE ZAKYNTHINO 2025 - PAPARGYRIOU WINERY

Enjoy it with lemon-parmesan risotto, grilled sea bass with lemon and rosemary, or aged yellow cheeses.

Pumpkin risotto with dry anthotyro cheese

  • 250 grams of Arborio rice
  • 500 ml of vegetable broth
  • 1 medium onion
  • 50 ml olive oil
  • 150 ml white wine
  • 300 gr pumpkin
  • 1 star anise
  • 100 gr butter
  • 50 ml of cream
  • 150 g dry anthotyro cheese
  • Salt
  • Pepper

Pare the pumpkin, chop half in dices and boil the rest in salted water with star anise. After it gets soft, remove the anise and transfer into a blender. Blanch the diced pumpkin in salted water. Chop the onion and sauté in olive oil, in a large saucepan until it is transparent, then add the rice by stirring with a wooden spoon. Pour in the wine and allow it to evaporate. Add some of the broth occasionally, by stirring continuously until the risotto is done. Remove from heat, add puree and diced pumkin, cream, butter, and cheese and mix all the ingredients well. Serve and if you like,  add a little more cheese and some of the pumpkin's dices.
