George Xydakis, dentist in the profession, tasted, for the first time, a sweet wine from sun-dried Kountoura grapes, in 1966, from his winegrower grandfather. Xydakis Microwinery was founded in 2001 and included an old vineyard with Cycladic grape varieties, with which he engaged as an amateur and bottled wines for friends and winelovers. His philosophy is based in wines from old vineyards, mainly in Mykonos but also from the surrounding islands, with minimal interventions and indigenous yeasts.
Aidani 2020 Xydakis Microwinery ferments with ambient yeasts and remains in contact with the fine wine lees for 4 months, so it acquired dense structure and impressive complexity. Its seductive oiliness comes in perfect balance with its sharp acidity and light tannic substance.
